Tirando o truque de nas Preferências do Sistema -> Notificações definir o Não perturbe de 00:00 até 23:59, o jeito mais elegante de remover por completo, mesmo, a Central de Notificação é abrir o termial e digitar:
launchctl unload -w /System/Library/LaunchAgents/com.apple.notificationcenterui.plist
E depois:
killall NotificationCenter
Para habilitar novamente, digite:
launchctl load -w /System/Library/LaunchAgents/com.apple.notificationcenterui.plist
